This past weekend at work we set up two wine tables for members to select a wine they wished to have with dinner. It was a wonderful buffet of crab legs, oysters, sushi, veal and salads. It was a feast for the eyes and the taste buds. Flanking these buffets were two wine tables: one representing new world wines (mainly Californian), one old world wines (a mixture of French and Italian). At the private clubhouse that I work at, we are known greatly for the Bordeaux’s and Cabernet Sauvignon’s in our cellar. Heavy, rich, flavourful wines that fill the palette and senses with worlds of wonder. Though members have their favourites, one of the wines that took my heart that night was the Tom Eddy Cabernet Sauvignon. Such a wonderful delight to be able to taste such magnificence…
…Tom Eddy 2007 Cabernet Sauvignon… It is rich and flavourful but not overpowering. It lingers on the tongue and fills the senses in the most positive way. A delicate balance of oak and grape, there is vanilla and current, deep red cherry and slight toast. It’s not jammy nor is it under-ripe. The texture is smooth, and it fills your mouth, but does not leave an astringency. It is a remarkable wine, full of life, definitely one for the books.
Another popular seller was the Karl Lawrence Cabernet Sauvignon. Though I didn’t get an opportunity to taste this delicious looking wine, I had the opportunity to observe the deep colour as I poured the wine from bottle to glass. The colour of the wine was as rich as nutrient-rich soil. The colour was so intense it almost looked opaque as the sun gleamed through the glass to the wine, showing a deep garnet colour in the sunlight. As the wine swirled around in the glass the colour lingered for seconds as the legs of the wine dripped back to the bowl. The colour of the wine promised to show-off a magnificently balanced and perfectly aged Cabernet Sauvignon…now I need to taste the wine to complete the picture Karl Lawrence has painted in my mind.
